Peanut butter pie

We had some lovely visitors last week, and they enjoyed a dessert I served called Peanut Butter Pie. The wife urged me to post the recipe on my blog, so here it is.

Peanut Butter Pie

Crust:

1 1/2 cups crushed graham crackers
1/4 cup sugar
1/4 cup melted butter or margarine

Mix, then press the crumbs into a 9x9" pie pan. Bake at 375F for ten minutes. Remove and let cool.

Filling:
1 pkg (8 oz.) cream cheese, softened
1 cup creamy peanut butter
1 cup sugar
1 T butter or margarine, softened
1 t vanilla

1 cup heavy cream

Whip the cream until it is stiff. Set aside.

Combine the other filling ingredients and beat with a mixer until smooth. Fold in the whipped cream. Spoon into cooled crust. Chill.

This is such an easy dessert that it's become one of my standards whenever I'm asked to bring a dish. I usually triple the recipe for potlucks.

  1. Hmmmm. I like peanut butter, cream cheese, whipped cream and pie, so sounds like a winner to me!

  2. My sister-in-law adds a warm container of chocolate frosting to the top and refrigerates afterward. It's what my kids want as a birthday cake!

    Ya just HAD TO POST THIS, didn't ya???

    Just when I thought it was safe to go back in the kitchen.

    I'd been toying with a new idea for frosting for my triple-chocolate version of red velvet cake....guess I got one now, ain't I???
