Not to sound like a jerk, but this is what happens when you don't properly staff a kitchen. I've seen this before, someone thinks they can just have the bus boys or one of the low level cooks clean dished in between their normal job and this is the result.
I've also walked in on the receiving end of this. Picture this show up for dinner shift at college cafeteria for work and all the dishes/pots/pans from the lunch service are sitting there waiting for me. The problem, our manager was runnign short on student work study money and decided I could double up my work in the same amount of time.
Very funny. Okay, I do manage to keep a kitchen better than that when cooking.
