Our strawberries have gotten their "second wind" after taking a break mid-summer.
Now I'm getting a nice bowl-full every other day or so.
Older Daughter has taken to making an absolutely yummy treat with these beauties: Chocolate-covered strawberries.
She starts by melting some chocolate chips (with a little olive oil added) in a metal bowl over a pot of boiling water, double-boiler style.
She hulls the strawberries, then carefully dries them. Chocolate apparently doesn't stick to wet strawberries.
Then she drops the strawberries, one at a time, into the chocolate and kinda rolls them around. After that she lays them on a cookie sheet lined with parchment paper.
She puts these, still on the cookie sheet, in the freezer for about 15 minutes, then they go in the fridge. It's a nice treat for a hot day, and a great way to use up an abundance of strawberries.
Using coconut oil instead will make the chocolate stick even better to the strawberries. Although I know a lot of people avoid that oil because it's higher fat.

ReplyDeleteI can strawberry syrup to use on pancakes or mix with lemonade for a refreshing summer drink.
ReplyDeleteI like strawberries. I usually clean and cut each one into 4-8 pieces and then spoon sugar on and mix well. Refrigerate for a few hours and they are ready to eat by the spoon full.
ReplyDeleteI like chocolate but prefer it as chocolate and not on or mixed with anything else.
I like to make my own snack mix, skipping salty and sugary things. Dehydrated fruit works beautifully for that little spike of sweetness in your mix of whatever nuts. I'm not fond of peanuts. Anyway, strawberries work great, as do other dehydrated fruits. Blueberries might too be I can't keep them to dehydrate.
ReplyDeleteI also add some of the Bake Believe dark chocolate chips to the mix, which even gives more reason to add strawberries as the dried fruit. And sugar free coconut.
I pack these up in 1/4 cup servings and freeze.
My perfect healthy snack. Good alone or with yogurt, or in cereal if you like cereal, which I don't.
But others do, so, it works.
