Then I cook them in he instant pot for 40 min.(the Instant Pot chart says 30, but I like them super soft for refried neans) By the way, the instant Pot is the best thing since sliced bread. It can not explode, unless you over fill. I had it happen to me and I ended up just tossing them after 12 hrs of cook times.... It is possible that I didn't store them well enough. I had them in the original bag they came in for about 2-3 years or so and who knows how old they were when I bought them. That means boiling for about 30 minutes prior to packing. Putting hot beans into hot jars into hot water reduces the chance of bracking a jar. Remember to vent the canner for 10 minutes before you put the stopcock on. That's to get out the air and replace the air in the jar with water vapor, which is hotter at a given pressure. <br /><br />Pints have to process for *75* minutes, quarts for 90. Most authorities using 11 pounds to give a bit of safety margin. It was her bread bowl -- the bowl she would make bread in. It's too heavy (and I'm afraid of breaking it) for making bread, so we use it as a general storage bowl. I'm guessing it's at least 85 years old, since (I believe) she got it for her wedding.
